Carrot and Chilli Soup

A lovely winter warmer!

What you'll need..

  • carrots
  • chillis
  • 1 onion
  • dried herbs
  • garlic (optional)
  • stock cubes

Method

Fun fun fun…No need to peel your carrots for this one, just roughly chop them and chuck them into
a pan with some diced onion and some crushed garlic, slowly simmer until everything has softened.

Once boiled, add in your chillies (to taste) and boil for a further 10 mins, allow this to cool and if you
have a blender, whack the mixture in and blitz away.

If you don’t have a blender I’d maybe see if your neighbour has one 😉.

Serve in the most regal bowl you can find and sprinkle with some dried herbs for presentation.
