Vegetable Thai Curry

Always one to warm you up!

Here is a list of ingredients if you’d like to make this from scratch, however if not, you can always use some ready-made
Thai curry paste.

What you'll need..

  • lemongrass
  • garlic
  • onions
  • coconut milk
  • peppers
  • mangetout
  • chillies (to taste)

Again with the veg, you can pretty much chuck anything you like into this, its really quick and easy and a great all rounder 😊


Blitz together garlic, lemongrass, a pinch of salt, a full onion, and a chilli or 2 so a paste is made, lightly fry this off in a pan and begin to add your veg.

Let this gently fry together for around 10 minutes.

Next add in some coconut milk; depending on the size of the curry you are making you may need 1 or 2 cans.

Allow this to simmer until the veg is to your desired texture, around 20 minutes is best.

Serve with some rice and any leftovers are always good for lunch the next day!
