One Pot Mixed Veg Wrap-a-thon

This is a super easy “chuck it all in” dish…

What you'll need..

  • mixed veg of your choice
  • onions
  • tomatoes
  • mozzarella cheese
  • cream cheese
  • wraps

Method

Preheat your oven to 200 degrees OR you can do this in an air fryer (cook at 180 degrees).

Chop up your chosen veggies and lightly fry in a pan along with your onions, season well with some dried herbs (I always find paprika OR oregano works well for this one).

Add in your cream cheese so you end up with a saucy mixture.

Add your vegetable mix into your wraps and fold so they are sealed nice and tight, you can then top with some tomato sauce (recipe below) and mozzarella cheese.

Bake in the oven or air fryer for around 20 minutes or until your mozzarella is nice and golden.

For the sauce – add your finely chopped cherry tomatoes and crack in some black pepper, cook until a sauce consistency is formed or blitz in a blender if you have one.

Close
