Mushroom Risotto

Regardless of the time of year, you can never go wrong with a risotto.

What you'll need..

  • mushrooms
  • stock cubes
  • risotto rice
  • garlic (optional)
  • cream cheese

Method

Chop up your mushrooms and boil in a pan along with a vegetable stock cube and some fresh garlic.

Once these are nice and soft, add in your chosen amount of risotto rice and slowly simmer; keep an eye on this so it doesn’t stick and continue to add water until your rice is either soft or a little bit al dente; depending on your preference.

Add in your cream cheese and simmer slowly…

Sprinkle with some fresh or dried seasoning so it looks nice and fancy and Beeelllllissimo; there we have it!
