Since 2003 The Cheddar Gorge Cheese company has been making its renowned cheese using only fresh local unpasteurised milk.  They only make authentic Cheddar, in the heart of Somerset.

In 2006, they started maturing some cheese in the nearby caves within Cheddar Gorge.  In fact, Gough’s Cave in the Gorge, is the original historical Cheddar Cheese larder.

Natural Cave Matured cheddar has been an outstanding success due to its complex flavour, aroma and texture. It’s unique. Their cheddar from Cheddar is truly history in the making!
